MICROWAVE CHOCOLATE CUPCAKES

Chocolate craving is nothing new for me. Us four sisters are highly prone to get pimple if we eat too much chocolate in summers and so we try to keep away a little bit. But what can you eat on a boring Saturday evening when you don't want to go in the kitchen? Yes, five minute easy chocolate cupcakes, nothing can be a better option.


Here is the list of ingredients you need. This recipe can make 6-8 cupcakes for me. You can also use this recipe for make a cake.

FOR THE CUPCAKES:
Flour                                     4tbs
Icing Sugar                            4-5tbs
Cocoa                                   1-2tbs
Egg                                       1
Milk                                      3tbs
Oil                                        3tbs
Baking Powder                     1/4 tsp
Vanilla Extract                       1/2-1 tsp

FOR THE CHOCOLATE GLAZE
Chocolate                               As Required
Milk                                       As Required
Berries                                   Optional


METHOD:
The method is way too simple. Mix the flour, sugar, cocoa and the baking powder in a bowl. Add the egg, the milk and the oil and stir well enough to get rid of any lumps. Now add the vanilla essence and git it a quick stir. When I mix all the ingredients, I always check the taste because sometimes the cocoa can make it a little bitter so i all some sugar and a fourth of a teaspoon of milk in there. The mixture is quite runny so don't add flour.
Once the mixture is ready take a microwave safe cupcake tray and line it with the cupcake liners. If in case you don't have a microwave safe tray then you can take small ramekins or anything in which the liners fit and are microwave safe. Now pop them in the micro wave all at a time from 1-2 minutes. If you are using this recipe for a single cake then the time can vary 2-3 minutes. Now you are very likely to burn the cupcakes so KEEP CHECKING. While the cupcakes are in the microwave, make the chocolate glaze. Add chocolate and milk in a bowl. Once the cupcake are out take them out of the tray or anything you are using and cool them on a wire rack. While they are cooling pop the milk ad the chocolate in. The purpose of the milk is to make the chocolate runny enough to reach a pouring consistency. Pour the chocolate on the cupcakes and and top it with a berry or why not a berry jelly bites? They taste lovely! Pop them in the freezer for just a minute or otherwise they will get rubbery.

These cupcakes taste delicious and are very easy. You can make any flavor. Try some lemon ones! All you need to replace is the cocoa with yellow food coloring and vanilla essence with lemon extract! I hope you enjoy.
